Jacket Potato With Whipped Feta & Sumac

1 baking potato

2 tsp olive oil

½ tsp garlic salt

50g feta

50g Greek yogurt

1 roasted red pepper from a jar (about 25g), finely chopped

½ tsp sumac

How to make:

Before starting heat the oven to 220C/200C fan/ gas 6. And start with boiling the potato, when it becomes soft inside put it into an ice bucket to cool down the potato. Then take it out into a bowl and let it absorb the mix of 1 tsp olive oil and the garlic salt.

Cut a deep cross into the top of the jacket, drizzle the garlic oil into the cross and rub it all over the outside. Return to the oven and bake for 15 mins more until the edges are golden and crispy. 400g can tomatoes

2 x 400g cans butter beans, drained

 How to make:

4 corn tortillas

100g low-fat soured cream

30g grated cheddar

 How to make:

First, heat the pan while oil in it then add peppers and onions. When they became softer you must add all the beans, fajita spice mix, chopped tomatoes, and some seasoning and cook them for 5 mins.

Besides that, heat the grill and warm the tortillas in the microwave for 30 seconds. The next step is to Spread a quarter of the pepper and onion mixture over the base of an ovenproof dish and put some of the soured creams on this mixture and a warm tortilla, then repeat the layers four more times.
